This robust sake stands its ground when it accompanies highly-flavored, rich dishes. Wonderfully cleansing when paired with Kakuni pork belly or black cod, but pairs well with full-flavored sashimi such as tuna or mackerel. Mature, mild aromas of rice with a hint of bitterness. Clean but robust acidity is followed by the sharp finish true to its name "Cho Karakuchi (super dry)". It may not make the best choice for sake novice, but great for those who desire to move beyond "fruity" and try dry, rice-y sake.
